Die Speicheldrüsen von Säugetieren sind exokrine Drüsen, die über ein System von Kanälen Speichel produzieren. Der Mensch hat drei paarige Hauptspeicheldrüsen (Ohrspeicheldrüse, Unterzungenspeicheldrüse und Unterzungenspeicheldrüse) sowie Hunderte von Nebenspeicheldrüsen. Speicheldrüsen können als serös, schleimig oder seromukös (gemischt) klassifiziert werden.Bei serösem Sekret wird hauptsächlich Alpha-Amylase abgesondert, ein Enzym, das Stärke in Maltose und Glukose aufspaltet, während bei schleimigem Sekret hauptsächlich Muzin abgesondert wird, das als Schmiermittel dient.
