Paneer ist ein wichtiges wärme- und säurekoaguliertes Milchprodukt, das als Grundstoff für die Zubereitung zahlreicher kulinarischer Gerichte verwendet wird. Energie ist eine Grundvoraussetzung für die verschiedenen Verarbeitungsprozesse in der Milchwirtschaft. Ein solarthermisch unterstütztes Doppelrohr-Wärmetauschersystem mit vier Durchgängen wurde zur Energieeinsparung entworfen, hergestellt und getestet. Die sensorischen und rheologischen Eigenschaften von Paneer, das mit diesem System zubereitet wurde, entsprachen denen der Kontrollprobe. Das System ist flexibel und kann je nach Bedarf mit hei em Wasser nachgefüllt werden und kann erfolgreich für die Zubereitung von Paneer mit Solarenergie eingesetzt werden. Das Designmerkmal umfasst auch die Möglichkeit der CIP-Reinigung des Wärmetauschers.
