Das Kontaminationsrisiko durch Viren und Bakterien in Lebensmitteln stellt ein neues Problem für die Lebensmittelindustrie dar. Die vorliegenden Forschungsarbeiten befassen sich daher mit der Frage der Kontamination von Lebensmitteln durch Mikroorganismen und den Formen ihrer Prävention und Kontrolle. Lebensmittel können durch infizierte Personen oder durch Kontakt mit kontaminiertem Wasser kontaminiert werden. Die beste Möglichkeit, eine Kontamination von Lebensmitteln zu vermeiden, besteht daher in der Einhaltung einiger grundlegender Regeln bei der Handhabung, Zubereitung und Lagerung dieser Lebensmittel, wie z. B. gründliches Waschen der Hände, der Utensilien, des Obstes und des Gemüses, die Wahl von gekochten Lebensmitteln, das Nicht-Einfrieren von bereits eingefrorenen Lebensmitteln und die Aufbewahrung in einem abgedeckten Behälter im Kühlschrank bei einer Temperatur unter 4 C oder im Gefrierschrank bei einer Temperatur zwischen -12 C und -15 C.
