Rotkohl (magentafarben bis violett) wurde erstmals 1570 in England beschrieben, wobei die frühen Sorten alle rundköpfig waren. Heute gibt es rote Sorten in allen verschiedenen Kopfformen. Die "rote" Farbe beschränkt sich auf die "Haut" jedes Blattes und Stiels. Die Zellen darunter sind normal grün oder wei , und wenn man einen Rotkohlkopf vor dem Kochen anschneidet, ergibt sich ein schöner Rot-Wei -Kontrast. Wirsing und Rotkohl werden in den Vereinigten Staaten kaum angebaut. Rote Sorten sind jedoch in Nordeuropa beliebt und Wirsingkohl in den wärmeren Teilen Europas. Der meiste Kohl, der hierzulande angebaut wird, ist grüner oder wei er Kohl mit glatten Blättern.
